Carrot Caesar Pasta Salad



A delicious caesar salad with pasta and carrots.


Ingredients

For 4 servings.

4 cups pasta, I love the shells, but any type of large shape is good
2 cups shredded carrots, I used purple and orange carrots for extra color
3 cups shredded romaine
1 cup shredded parmesan
1/2 tbsp kosher salt
1/2 cup caesar dressing
1 Tbsp olive oil
1/2 cup julienned onion-
1/3 cup finely chopped chives for garnish

Instructions


Cook the pasta according to box instructions, usually in boiling water for 6-8 minutes. Do not over cook the pasta. You want a more firm texture for this salad.

Add the olive oil to the cooked pasta and chill in a refrigerator for a few hours until pasta is cold.

After the pasta is cold, add the kosher salt, carrots, onion parmesan, romaine and dressing in that order. Stir well to incorporate all ingredients. Return to the refrigerator and chill until service time. Garnish with chopped chives. Serve cold.
